ingredients
- 1 1⁄2 cups rolled oats
- 1⁄2 cup oat bran
- 1⁄2 cup brown sugar
- 1⁄4 cup sunflower oil
- 1⁄4 cup honey
- 1 teaspoon salt
- 1⁄4 cup cocoa nibs
- 1 cup dried banana (or other fruit)
directions
- Mix all ingredients thoroughly,
- press into an oiled 9 inch square tray (silicon is best),
- and bake for 20-25 minutes at 350 degrees.
- Allow to cool before cutting into bars. Will keep for weeks stored in airtight container in fridge. Also freezes well.

These are indeed delicious, chewy bars. So glad I decided to make them! I loved the banana chips mixed with the honey and cocoa nibs (cleared from the pantry at long last- thank you!). Only change was to cut the salt to 3/4 tsp and to use a 9 x 11" pan. Next time I might cut the brown sugar to 1/4 cup as they are pretty sweet. Great recipe, I can see why the farmer's market crowd eats these up!
