ingredients

  • 1 12 cups rolled oats
  • 12 cup oat bran
  • 12 cup brown sugar
  • 14 cup sunflower oil
  • 14 cup honey
  • 1 teaspoon salt
  • 14 cup cocoa nibs
  • 1 cup dried banana (or other fruit)

directions

  • Mix all ingredients thoroughly,
  • press into an oiled 9 inch square tray (silicon is best),
  • and bake for 20-25 minutes at 350 degrees.
  • Allow to cool before cutting into bars. Will keep for weeks stored in airtight container in fridge. Also freezes well.

  1. What sort of oat bran do you use? Something like Bob's Red Mill? Or the cereal and crumble it up?

  1. These are indeed delicious, chewy bars. So glad I decided to make them! I loved the banana chips mixed with the honey and cocoa nibs (cleared from the pantry at long last- thank you!). Only change was to cut the salt to 3/4 tsp and to use a 9 x 11" pan. Next time I might cut the brown sugar to 1/4 cup as they are pretty sweet. Great recipe, I can see why the farmer's market crowd eats these up!
