  • Saute garlic and onion in oil in saucepan. Add and lightly saute carrots, zucchini, and cauliflower. Add broth, rice, amd tomatoes and bring to a boil. Simmer 35 min or until rice is soft. Add seasoning.

  1. Very good. I used no zucchini. I also used 1 cube of vegetable seasoning, 1/2c brown rice and no garlic. This soup had a very good flavor and cooked in about 1 hr.

  3. Wonderful, flavorful soup. I'd recommend simmering covered as I didn't and I ended up having to add more broth. I made half a recipe using a full can of Italian style tomatoes. I served it with Spicy Corn Bread #147018.
     
  4. This was a delicious soup; we felt so virtuous eating it,too! I did notice that the rice cooking with the vegetables in the soup absorbed quite a lot of the broth. I just added more broth and will keep extra on hand next time I make it. The rice cooked to a good soft, creamy texture. Cooked this way my DH did not mind the brown rice at all. Usually it is too firm for his taste. I served this with garlic bread -- I think cornbread would be a good accompaniment, too. Thanks for a super meatless recipe.
