  • Cut all the vegetables into long pieces.
  • Pour the ghee in the frying pan and add the garlic and cashews, stirring until slightly browned.
  • Add the vegetables and fry until they are fully cooked.
  • Add the spices, adjusting to your taste.
  • Add rice, stirring well to coat with the spices, and fry until heated through and well mixed.

  1. I used what was available in our kitchen- cooked basmati rice, peanut oil, green chili, red onions and cilantro. Fried the onions until medium brown, added cilantro, green paper and salt to taste. I then added the rice and constantly stirred gently until all was hot. My wife declared it was the best fried rice she'd ever had, better than what we have in restaurants. But then there was another declaration - I'm the fried rice expert and will be making it going forward - :-)

  4. I made this rice to go with Tandoori chicken. It was easy to prepare & very tasty. I used only 2 large garlic cloves, 1/2 a sweet onion, a handful of mushrooms & some chopped kale along with the spices & cashews. I always have all these spices on hand so it will be a "go to" recipe, good enough for company, easy enough for every day.
     
  5. The recipe has a few ingredients I don't usually stock (but have 'em now!), but that just prompted me to try them out! VERY, VERY NICE TASTING RICE, but I'd definitely say this serves 4 very nicely (so the Nutrition Facts are off a bit, what with just 2 servings)! This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. If I don't reply to a message about one of my recipes, now you know why! Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
