- 2 tablespoons olive oil
- 1⁄2 onion, chopped
- 1 (8 ounce) can tomato sauce
- 2 teaspoons coriander
- 1 1⁄2 teaspoons cumin
- 1 1⁄2 teaspoons garam masala
- 1⁄2 teaspoon cayenne
- 0.5 (8 ounce) bag dry lentils
- 3 cups water
- 0.5 (8 ounce) can coconut milk
directions
- Saute onion in olive oil until golden brown.
- Add tomato sauce through lentils and 1 cup of water. Turn heat to medium low and cover.
- Cook about 15 minutes or until water is mostly absorbed.
- Add 1 cup water, cover, and cook another 15 minutes.
- Repeat Step 4 if necessary.
- Stir in coconut milk and simmer for 5 minutes.
- Serve over rice.
