"I wanted a recipe for Indian lentils that used what I had on hand, and I came up with the following. It's a little spicy, so you may want to omit the cayenne."

  • Saute onion in olive oil until golden brown.
  • Add tomato sauce through lentils and 1 cup of water. Turn heat to medium low and cover.
  • Cook about 15 minutes or until water is mostly absorbed.
  • Add 1 cup water, cover, and cook another 15 minutes.
  • Repeat Step 4 if necessary.
  • Stir in coconut milk and simmer for 5 minutes.
  • Serve over rice.
