Inside-Out Stuffed Bell Peppers

"This is a really great and easy recipe. My kids love it; and of course they don't like veggies! I received this through a recipe swap from a woman named Jeannie Lofland. I add fresh garlic to the beef and sprinkle seasoning between layers. I also like to use different cheeses; cheddar can be so oily. Try putting a bit of cheese on top of the beef before adding the other ingredients."

directions

  • In a skillet, brown beef and drain.
  • Transfer to a greased 2-quart casserole dish.
  • Add the next eight ingredients right on top of the beef.
  • Cover and bake at 350 degrees for about 1 hour or until rice is tender.
  • Uncover and sprinkle with the cheese; return to the oven until cheese melts; about 5 minutes.
  • If the rice doesn't cook all the way; which sometimes happens, just cover with a bit more hot or boiling water and bake a little longer.
  • So the dish doesn't get washed out by the water; put some beef oxo cubes or just use beef broth to add more flavor.

  1. This tasted delicious. My only problem was the rice wasn't cooked all the way. Next time, I'll put it in the bottom of the dish. Made for Zaar Cookbook Tag 2010.

  2. Based on the other reviews, I used 1 cup of beef bouillon instead of 1/2 cup of water. I also mixed the ingredients together (except the cheese) rather than layering them. It worked perfectly to create a quick, tasty dinner.

  3. We loved this recipe!! I did end up having to add an extra 1/2 cup of water. Next time I might layer meat, rice and then the rest of the ingredients, just to keep the rice down near the bottom of the pan where the liquid is. Excellent recipe!! A definate keeper!! A+!!!

  4. This was very good, but needed spicing up just a bit. I've already prepared this casserole twice, once topped with cheddar cheese, and the second time with hot pepper jack cheese. Hubby and I much prefer it with the hot pepper jack cheese. I also used seasoned ground pork sausage, (which our family makes ourselves) and used it in place of the ground beef, plus I added 2 tablespoons of chili powder, and added 1 (5.5 oz.) can V8 Vegetable Juice. I too placed the long grain rice in the bottom of a "greased" casserole baking dish, and then mixed the remaining ingredients together, and poured it over the rice. Instead of the cheddar cheese, I topped the casserole with 4 slices of hot pepper jack cheese, which only took 2-1/2 minutes to melt in the oven. I have never had nor made stuffed peppers before, but was glad I came across this recipe, it was so quick and easy to make. This recipe is similar to one of my recipes, Hamburger Spanish Rice. Perhaps this is why I really liked this recipe. Thanx for the recipe Zusie-Q. It was delish!!

  5. This recipe was soooo good! I did add some garlic to the meat mixture and I cooked my onion and pepper in with my meat. My picky husband won't eat onions and peppers if they are crunchy. We LOVED this recipe! Thanks for sharing this easy and yummy take on an old favorite!

<a href="http://bp-grafix.net/sitebuilder"target=new><img src="http://i72.photobucket.com/albums/i185/glittergus/icons/i.gif" border=0></a> I am a proud mother of three healthy boys aged 15,11 and 5. I'm originally from the tiny island of Bermuda and have been living in Edinburgh since July 2005. I've been collecting recipes since I was about 14 or 15 and been cooking and baking since then as well. I love all kinds of crafts also. In my spare time if I'm not in the kitchen; I crochet, make jewelry, bead, knit, sew, cross stitch, do plastic canvas and quilt. I have a short attention span, so I have plenty of different craft choices when I get bored of doing something. Oh, and I also like to read, listen to music, fiddle with any electronic gadget, collect dvd's and watch them, and I'm an internetaholic! :-) I keep a craft blog at http://hobbyzu.blogspot.com and I sell my crocheted items and patterns at http://hobbyzu.com. I keep pretty busy and being self employed gives me more time to explore cooking! :-) I'm mostly interested in cook books featuring regular old home cooking and favorites. When I moved to the UK I had to get rid of my cookbook collection. I did keep all my Bermudian cookbooks, charity cookbooks and 'The Foods of Israel Today' and Better Homes and Gardens 'Hometown Favorites'. <a href="http://bp-grafix.net/sitebuilder"target=new><img src="http://i72.photobucket.com/albums/i185/glittergus/icons/g5.gif" border=0></a> I am most passionate when it comes to my family and caring for them. Getting to feed them is an added bonus! Lucky for me, my boys are steadily growing pigs with bottomless pits for stomachs! lol :-) <img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/untitled.jpg" border="0" alt="Photobucket - Video and Image Hosting"> <img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/200_artistrichardneuman-art-prints_.jpg" border="0" alt="Photobucket - Video and Image Hosting">
