Inspired Grilled Cheese

"I like to make these on cooler days to serve with french onion soup. Using lite mayo instead of butter on the outside of the bread gives me more even browning and fewer calories. You can also make several on a cookie sheet and broil for a few minutes on each side."

  • Spread mayo on the outside of sourdough bread.
  • On inside of first slice, spread basil paste.
  • On the next slice, spread stone ground mustard.
  • Layer Swiss cheese, tomato and cheddar on one slice.
  • Drizzle with honey before closing sandwich.
  • Grill on panini press or fry pan until browned and cheese has melted.
