  • Heavily coat the inside of the Instant Pot with non stick cooking spray.
  • In a large bowl whisk together the flour, sugar, baking powder and salt. Next whisk in milk, eggs and vanilla extract until the batter is smooth. Pour the batter into the prepared Instant Pot.
  • Seal the lid on top and cook on Manual for 40 minutes using the Low setting. The pancake is cooked when a toothpick inserted into the middle comes out clean.
  • Use a rubber spatula to gently loosen the pancake from the sides of the pot and invert on a plate. Serve with your favorite pancake toppings.

  1. Did you have 2 Instant-Pots to take the picture? Otherwise one pancake would be cold after the other one cooked for over 40 minutes.
     
  2. I think this looks kind of yummy! More like a real cake than a pancake. I hope to try this weekend. It says it yields 1 pancake, but I'm guessing because it's so big, 1 pancake would serve 2-4 people if you cut it like a real cake. Editors, how many people do you think it would serve?   2. Alternatively, Pour batter on griddle or in frying pan and have pancakes in a few minutes that are normal size. Why would anyone even want this???? It's not saving any time at all, plus one side is all doughy looking.....
     
  3. 40 minutes cooking time per pancake? I don't think the family can wait that long for breakfast.
     
  4. The only reason to make this is to shower and get dressed (and shave, of you're a guy) after sealing the pot and starting the cooking. And it did turn out rather doughy.
