“From my favorite inherited cookbook, Cook Like a Peasant, Eat Like a King. I've not made this yet, but I like the simplicity of the recipe. Not a lot of spices going on here. The recipe just calls for "large potatoes", I'm thinking red waxy potatoes is the way to go, just pick some "large" ones. Here's the description from the book: "Lamb could be the best of all stew meats, more tender and flavorful than beef. It sends its aroma into every vegetable that it comes in contact with. Each country has its favorite lamb stew, but probably the most famous is the Irish farmer's. Irish lamb and Irish potatoes seem to have a singular flavor all their own."”

  1. Place all ingredients in a large pot. Cover tightly; bring to a boil. Then, over low heat simmer for 1.5 hours or until the lamb and potatoes are tender.
