ingredients
- 1⁄4 cup softened butter
- 4 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 1 (16 ounce) package confectioners' sugar
- 7 ounces sweetened flaked coconut (2 1/2 cups)
- 1 tablespoon ground cinnamon
directions
- NOTE: Be sure to use regular cream cheese, not whipped or reduced fat type.
- In a large bowl, cream together the butter and cream cheese.
- Add vanilla and confectioners' sugar.
- Beat until mixture forms a ball.
- Stir in coconut with a spoon.
- Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.
- Place cinnamon in a shallow dish and roll the balls in it.
- Place the balls on a cookie sheet and chill for about 1 hour or until firm.
- If you prefer "dirtier potatoes" roll the candy a second time after they have chilled.
- Alternatively dip in melted chocolate for Easter eggs.

How many does this make? The Nutrition analysis states that this recipe makes 1 serving; yield indicates 5 dozen. Calories for 1 serving (835 g) = 717. (835 g = 55 tablespoons). I can't imagine anyone eating all 55 tablespoons of these (1 serving) nor can I imagine making 5 dozen "potatoes" out of 4 oz cream cheese. What am I missing here?

We really liked these. I made a different mix to dip them in 1/4 cup cinnamon, 1/4 cup powdered sugar just scant 1/2 cup cocoa- sifted. I was using chopped walnuts for the 'eyes' and then decided I really liked the walnuts mixed in so we went with that. They were great each way. Next time i will try dipping then in milk or dark chocolate.

I was a bit skeptical at first, but these turned out so cute and tasty! I did use more cinnamon than stated, and pouring some cinnamon in a plastic bag and shaking a few "potatoes" at a time worked a lot faster and less messy than rolling. Next year when my little girl is a bit older I'll have her help me...perfect for kids to do! Thanks so much for the recipe...everyone was in love with them.

Those who tasted these Philadelphia Irish Potatoes loved them...They have provided the 5 Stars. My first batch was a bit loose. I found out why. Instead of using four oz. of Philadelphia Brand Cream Cheese, I put the whole eight oz. pkg. in...oops. I was determined to have this recipe succeed, so I made another batch that met the correct ingredients. Rave reviews!!! Another thing I innovated with was the way I added cinnamon to the little balls. I put the cinnamon (More like a few Tbs. ) into my glass measuring pitcher. I rolled he balls around by motioning the pitcher in a fast, circular direction. I had fun with that maneuver and it evenly coated the potatoes. One other thing....I used almond flavoring instead of vanilla. So ono. Lynne Llewellyn, WV
