- 1 lb lean lamb, cubed
- 2 medium onions, sliced thinly
- 2 lbs potatoes, sliced
- salt & freshly ground black pepper, to taste
- 1 tsp.dried thyme
- 10 ounces lamb stock
- chopped fresh parsley
directions
- Preheat oven to 350°F
- Put alternate layers of lamb, onion and potato in a casserole, season with salt and pepper and thyme, finishing with a layer of potato. Pour lamb stock over top.
- Cover and cook for about 2 1/2 hours.
- Serve, sprinkled with parsley.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
