Irish Stew in a Crock

ingredients
- 1 1⁄2 tablespoons butter
- 1 1⁄2 tablespoons olive oil
- 2 lbs beef, cut into 2-inch cubes
- 1 1⁄2 cups tomato sauce
- 1 cup beef broth
- 1⁄2 cup red wine
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄4 cup finely chopped fresh parsley
- 1 bay leaf
- 3 large potatoes
- 3 large carrots
- 3 onions
- 3 stalks celery
directions
- Heat butter & oil in a heavy skillet; brown beef cubes & transfer to crockpot.
- Add liquids & seasonings.
- Cut veggies into chunks and add to the crockpot.
- Cover & cook on low for 9 hours; thicken sauce with cornstarch, if necessary.

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
