- 2 cups all-purpose flour
- 1⁄2 cup unsweetened cocoa powder
- 1 1⁄3 cups dark brown sugar (packed)
- 1⁄2 teaspoon baking soda
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 1⁄4 cups low-fat buttermilk
- 1 egg
- 2 tablespoons applesauce
- 1 teaspoon vanilla extract
- 1 cup milk chocolate chips
- 1⁄3 cup chopped pecans
directions
- Preheat oven to 350 F and prepare your muffin tin by spraying with nonstick spray.
- In a medium bowl combine the flour, cocoa powder, brown sugar, baking soda, baking powder and salt and mix with a whisk.
- In a large bowl combine the buttermilk, egg, applesauce and vanilla.
- Add the wet ingredients to the dry and mix to combine; add the chocolate chips and pecans and fill each muffin cup about 3/4 full.
- Bake for 20-25 minutes (for regular sized muffin tins or about 13 minutes for mini muffins) or until a toothpick inserted comes out clean.
