- 2 quarts water, plus extra for rinsing
- 1 cup plain not iodized, salt
- 1 lb dark brown sugar
- 1⁄4 cup lemon juice
- 1⁄4 teaspoon garlic powder
- 1⁄2 cup soy sauce
- salmon, prepared as desired, leaving skin on
- wood chips
directions
- In suitable container, combine all ingredients, except salmon and wood chips. Mix well, add salmon, cover and refrigerate 8 to 12 hours. Rinse under cold water and pat dry to touch. Arrange in smoker, skin side down, and smoke 8 to 12 hours, adding more wood chips every 30 minutes.
