Island Blackberry Cobbler

"From my collection of handwritten recipes. Note: Use this only if you have wild mountain blackberries. As a substitute for berries you can use 4 cups rhubarb plus 2 cups fresh sliced strawberries."

  • Spread the berries evenly in a 9x13" baking dish. In a large mixing bowl cream together sugar and softened margarine. Add salt, flour and baking powder alternately with milk. Drop this batter by spoonfuls over the berries. Mix together 1 cup sugar and cornstarch and sprinkle over the batter. Pour boiling water evenly over all. Bake at 375* for 45-60 minutes, or until top is light brown and berry juice is starting to set. Serve cobbler at room temperature.
