Island Delight (Carnival Cocktail #1)

"I got a bar menu on-board ship during our recent cruise & had the names of some specialty drinks, but no recipes for them. Most were tasted, touted by another (there were 6 of us) or just sounded good to me. So I did the Zaar searches & found most of the recipes at the Carnival Connections site. I have only 1 question about this drink -- How could it not be good?"

  1. Ooh, this was yummy!! It was a teensy bit early in the day for booze, so I only made a half recipe. The ice cream choices in the freezer were Ben & Jerry's Pina Colada and Haagen Dazs Chocolate Peanut Butter, so I figured that the pina colada was the closest to vanilla I was gonna get without a grocery trip (peanut butter and grenadine are not friends). Unfortunately, I didn't get a photo because DH called me for something -- by the time I got back to my drink for a photo, it had kinda lost it's pretty :( . I guess I'll just have to make another one later, huh? Poor me! LOL Thanks for posting! Made for The Hot Pink Panthers for ZWT9

I am an American transplanted from Dallas to Iceland by marriage to a native Icelander & I retired to become his "Kitchen Queen". We love to entertain our family & friends, so I have an eclectic collection of recipes. I especially love simple, easy-fix, flexible & make-ahead recipes - BUT also like challenging myself on occasion. I enjoy baking & food photography. I am devoted to the "More is Always Better Principle" & apply it liberally to bacon, butter & garlic. I can have ingredient issues due to availability here in Iceland & my DH is medically diet-restricted from some ingredients as well. Either situation might require me to modify a recipe, but I will do my best to be true to your recipes & fair/honest in my reviews. Mary Pat (aka twissis)
