Directions

  1. Preheat oven to 400 degrees.
  2. Place fillets in baking pan and dust with 1 tsp each of thyme, parsley and mint. Sprinkle with lemon juice.
  3. In a second baking pan, pour 1/2" water, then thinly sliced orange, 1/2 apple (sliced), 2 tsps each of thyme, parsley, mint, marjoram and 2 tablespoons lemon juice.
  4. Bake fish on middle rack with the second pan on the bottom rack, for 20 24 minutes.
  5. While baking, prepare rice.
  6. Add to completed rice, remaining 1/2 apple skinned and diced, pecans and lemon juice to taste.
