Island's Best Grilled Shrimp

- 2 lbs large shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1 medium yellow onion, small dice
- 1⁄4 cup minced fresh parsley
- 1⁄4 cup minced fresh basil
- 1 teaspoon dry mustard
- 2 teaspoons Dijon mustard
- 2 teaspoons kosher salt
- 1⁄2 teaspoon ground black pepper
- 1⁄4 cup olive oil
- 1 lemon, juice of
directions
- Combine all ingredients and allow them to marinate for at least one hour (the recipe states to do this at room temperature but I prefer to do this in the refridgerator).
- Skewer the shrimp.
- Brush the grill with oil or spray with cooking spray and then heat it up.
- Grill the shrimp (but don't over cook them!).
