ingredients
- 45 ml white rum
- 2 teaspoons light coconut cream
- 2 teaspoons lime juice
- 1 teaspoon lemon juice
- 1 teaspoon orange juice
- 1 teaspoon sugar syrup
- 90 g crushed ice
- fresh coconut, shavings
directions
- Mix all the ingredients in a blender with ice until smooth.
- Pour into glass.
- Add slices of fresh coconut shavings if desired.

This was quite tart. I didn't care for it, but DH liked it better, so he drank most of it. The rum and citrus really come through strongly. Using more coconut cream and sugar syrup (maybe not light coconut cream either) would certainly make this a bit smoother and more balanced. I really wanted to like this! Sorry Sonya!!
