ingredients
- 1 lb Italian sausage or 1 lb hot sausage
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 (15 ounce) can diced Italian tomatoes (undrained) or (15 ounce) can Mexican tomatoes (undrained)
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can white beans, rinsed and drained (ie navy)
- 15 ounces beef broth
- 15 ounces water
directions
- In large pot, brown sausage, onion and garlic.
- Add tomatos, beans, beef broth and water.
- Cook until hot.

I was hesitant to rate this soup because I made so many changes, but the output (served with toasted mozzarella cheese sandwiches) was outstanding and it was so easy. I used a 28 ounce can of diced tomatoes, added italian seasoning, 2 cups of vegetable broth and no sausage (we are vegetarians). Instead of the suggested beans I used garbanzos and pinto beans (my favorites). Also I added some carrots and bell peppers for some vitamins A and C (and because we had leftovers). I really liked the suggestion of mozzarella sandwiches with this soup! Will be making this again for an easy dinner.

So easy and so tasty! I used Hot sausage and added a little extra red pepper flakes for some heat. I also added a couple more cloves of garlic. I only had regular diced tomatoes, so I added italian seasoning. I used 3 cups beef stock and 1 cup water. I made some french loaf with it, the bread was perfect to dip in the yummy broth. This recipes is definitely a keeper.

Quick and delicious, with tons of flavor! It was so quick, it was ready before I was! I used 4 cups of veggie stock instead of beef broth and water because I always have a bunch on hand in the freezer and it adds such great flavor. Also pumped up the garlic to 4 cloves (this is Italian, after all!). Since I didn't have seasoned tomatoes, I added about 1 tsp basil, 1 tsp oregano, and a few pinches of celery seed to the end of the saute. I wanted to use fresh celery in the saute, but my celery was way past its prime and good only for the stock pot. Garnished with a green onion sliced up, greens included. Served fresh ciabatta bread on the side. This is such a delicious recipe. Thanks for posting!

WOW!!! This is delicious soup!! The combination of ingredients caught my eye and I couldn't resist trying it. I had some fresh Italian sweet sausage links that I removed the casings from, chopped up some celery stalks that I needed to use up, bumped up the cloves of garlic to 3, and picked a big purple onion to chop. I used Italian style tomatoes and opted for beef stock instead of broth. I did not have any white beans, or other beans to take the place, so for filler-sake I decided to add a small box of the tiny shell macaroni which worked out great. I used about 3 cups of stock and 1 cup of water just for the opportunity to add a little more flavor, and after a few shakes of your standard dried Italian seasoning and a bit of sugar (sorry...this is a learned trait...anything tomato gets a bit of sugar added) we had an absolutely fabulous pot of soup!! I think the broth was my favorite part and we used a good hunk of crusty bread for some serious sopping action!! Hope you don't mind all the little changes and additions and thanks so much for your great recipe!! :)
