Italian Boneless Chicken

"I don't even remember where I got this recipe, but we really like it and it is a different way to serve chicken. Great recipe if you have lots of leftover cooked chicken."

  • Preheat oven to 350°F.
  • Combine eggs, parmesan cheese and bread crumbs - mix well.
  • Stir in chicken.
  • Shape mixture into eight (8) 3/4-inch thick patties.
  • In a large skillet, cook patties in butter over medium high heat for 2-3 minutes per side or until golden brown.
  • Arrange in a 10 x 6 x 2-inch baking dish.
  • Cook green pepper and onions in oil until tender and remove from heat.
  • Add remaining ingredients, except cheese and stir well.
  • Spoon sauce over patties.
  • Sprinkle with cheese.
  • Bake uncovered for 25 minutes or until hot.

  1. After reading the reviews, and seeing Culinary Explorers pictures I had to make this with fettucini too. We loved the outcome, as it made for a wonderful dinner for the 4 of us. Made recipe as written, except left out the green peppers. No problem here with the patties holding together. Made for 1-2-3 hits.
     
  2. A very nice way to serve up chicken! I had no problem with the patties holding their shape! Used diced chicken breast that I always have frozen, but chopped it even finer for this recipe! Served it over angel hair pasta for a wonderful meal! [Made & reviewed in 1-2-3 Hit Wonders tag]
     
  3. This was very good. My grand-daughter loved it; my grand-son turned up his nose (he's the picky one in the family). I thought it was very good. I ended up making 6 nice sized patties and finishing it off with a couple of sprinkles of parmesan. Next time I think I would double the spaghetti sauce mixture. I liked that I could make ahead and pop it in the oven when I got home from work. Made for Fall 2008 PAC.
     
  4. This was very good. My dh made it and he said it was a lot of labor, but we did enjoy the finished product! He did have some issues keeping the chicken in patty form, and so when transfering it from the skillet to the baking dish he lost a lot of the browned pieces. We served it with fettucini and together they made a great meal.
