  • Dissolve the sugar in the water, then sprinkle in the yeast, stir an wait 10 minutes.
  • Add the salt and 4 cups of flour and beat for three minutes.
  • Add in 2-3 more cups of flour, stir or knead.
  • Add more flour until you have enough to make a good stiff dough.
  • Knead until smooth and soft.
  • Grease a good sized bowl and turn the bread over in it, lightly greasing all sides.
  • Cover with plastic wrap.
  • Rise until doubled in a warm place.
  • Punch down and divide into three parts.
  • Knead each, return to bowl, cover again and let rise.
  • When doubled, pre-heat oven to 450 degrees.
  • Knead gently and shape the dough into three oblong shapes.
  • Place on a large, lightly greased baking sheet which has been sprinkled with corn meal Cover with a cloth and let rise until doubled.
  • Just before baking, score bread with a sharp knife very lightly down the middle then mist bread with water.
  • Turn the bread and mist every 5 minutes.
  • Bake 20 min or so or until the bread is golden brown and sounds hollow when tapped on the bottom.

  2. Great recipe can be adapted for different purposes. Don't mist bread and you get a thick crunchy crust great for dipping or mist and get a thin crisp crust for sandwiches. I added different amounts of flour each time I made the dough. Now I just go by feel, it's generally 7-9 cups. Thank you so much for posting this!

Barb, this bread is excellent...I got 3 good sized loaves, and one small loaf (for mom)...Nothin' to mixing up and baking...The dough is great to work with...I didn't spritz the loaves, but, they turned out fine anyway! I posted my recipe for you...I'll be making yours from now on, thanks! Laudee
     
  4. this is wonderful, just what i was looking for. so light, such a wonderful texture, not too crunchy or too soft. i did omit spraying the water on them, and i have no regrets, however, when i get a sprayer maybe i'll try it. the amount of flour is accurate i used 8 cups. i have made this 2x, the first time with all purpose flour and it came out very good. the 2nd time i made it i used king arthur bread flour, i was very extrmely pleased with the results. i can't wait to use this dough for my next pizza.
     
  5. This recipe proved to be very wet and I had to add at least 2 extra cups of flour to get i to an accepable consistency. Otherwise the recipe worked well.

  1. This was so good! I halved the recipe and got one really nice big oval loaf. I didn't have anything to spray water on it with so I just put a pan on the bottom rack and filled it with boiling water instead. The bread is so lovely, just the right amount of crispy crust and the inside is so soft and light. I will be making this one a lot! Thanks for the recipe.
     
  2. WOW!!! What a fantastic dough! I added a half cup of olive tapenade to one of the loaves...MMMMM! I also rounded the loaves and spritzed with olive oil instead of water! Thanks!!!

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
