Italian Meatloaf

"This recipe is a welcome break from the same old Meatloaf recipe. My mother made a recipe book of her favorite recipes, and this was one of them. Very good and economical."

  • Combine meat, onion, crumbs, Parmesan Cheese, Eggs, and seasonings.
  • Mix well.
  • Bake at 350 for 30 minutes.
  • Pour off grease drippings.
  • Combine Tomato Sauce& Oregano.
  • Pour over Meatloaf.
  • Top Meatloaf with Mozzarella Cheese.
  • Bake an additional 30 minutes.

  1. I thought this was a darn good meatloaf! We paired it with a side of spaghetti and it was the perfect size meal. Next time I will try to add some Italian seasonings to the meat mixture itself. Another idea was to add a layer of sauce and cheese between two layers of meat, and still have the cheese layer on the top. Of course, it was delicious just as is, too. A great meatloaf recipe - thanks!
     
  2. I personally just don't have any luck with meatloaf. It had all the ingredients my family likes but I did have to add some of the tomato sauce into the meatloaf as it was a little too dry to hold together. Followed the cooking instructions but for some reason mine stuck to the bottom of the pan. Family said it was good but was a little too dry, needed more flavor and they didn't care for the parmesan cheese in it although parmesan is a favorite in this house. I'm just not good with meatloaf no matter what I do or what recipe I use. I must have a meatloaf phobia.
     
  3. VERY YUMMY!! I made this with a little more healthier though, I used groun turkey (1 gram of fat per serving)and I used 1 1/2 cups of bread crumbs and 1 whole egg and 1 egg white. This dish was a big hit with my company. This has been added permenatly to me cookbook!

I'm married and have two boys. They love good food and can eat plenty of it. Thank heavens I inherited my cooking and baking skills from my Mother and Grandmother. I'm not what you call a fancy cook, but I know how to put "good tasting" food on the table. I love the Taste Of Home Annual Cookbooks......they are good down home recipes from normal people like me. I would love to be able to submit more recipes but my time is so limited with a full time job and my two sons. Hopefully soon I can find more time for not only cooking but sharing these favorites with my 'zaar' friends.
