  • Cook linguine according to package directions.
  • Drain and keep warm.
  • Chop tomatoes and onion.
  • Slice zucchini.
  • Snip parsley.
  • Heat oil in a stir-fry skillet over medium heat until hot.
  • Add pressed garlic to skillet; stir-fry for 15 seconds.
  • Add zucchini and onion; stir-fry 2-3 minutes or until vegetables are crisp-tender.
  • Add tomatoes, parsley and seasonings.
  • Heat 1-2 minutes, stirring gently until heated through.
  • Remove from heat.
  • Stir in linguine.
  • Grate parmesan cheese over pasta.
  • Serve immediately.

  4. This recipe really taste good and was very easy to prepare. I improvised it a little since I didn't have some of the ingredients. used fresh marjoram, fresh basil and a dash of dried italian seasoning. I also used Rotini pasta instead of Linguine. I threw in the pasta while the pan was still on the stove and added some itialin dressing to give more flavor. I actually forgot to add the Parmesan but my husband and I enjoyed it. Thank You Gingerbear!
     
  5. Delicious way to eat your veggies. I added a sliced yellow squash in addition to all the vegetables already in this. I also didn't bother to seed the tomatoes, the extra moistness from the seeds was not an problem in this recipe.

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
