“I was in a rush when I got home from work this evening, didn't have much in the cupboards so threw this together and served it with brown rice and fish, although it was so good I would happily make it again with just some rice or crusty bread on the side. I guess it could even be served as a pasta sauce, although it might be a bit thick... Please take the measurements as approximates as I just kind of threw everything in the pan! :-)”

  1. Heat the olive oil in a pan.
  2. Add the cherry tomatoes, onions, garlic, chilli, all purpose seasoning and black pepper.
  3. Stir frequently so it doesn't catch, cook until the onions are soft and the cherry tomatoes are falling apart.
  4. Add the frozen peas and cayenne pepper, continue stirring frequently, cook until the peas are defrosted and nearly cooked.
  5. Add the tomato puree, capers, and green and black olives.
  6. Continue stirring frequently, cook until the peas are completely cooked and the all the ingredients are hot.
  7. Stir in the basil leaves and serve :-).
