Italian Sausage Stew

  • Fry the sausages in 1 tablespoon of the oil in a casserole dish until brown.
  • Remove and set aside.
  • Add the carrots, celery and onion to the casserole dish and cook for 10 minutes, adding the rosemary and garlic for final minute.
  • Add the lentils, tomatoes and stock.
  • Return the sausages to the casserole dish, bring to a boil, cover and simmer for 20 minutes.
  • Remove the lid and cook for a further 10 to 15 minutes until the lentils are soft.
  • Season to taste with salt and pepper.
  • Serve with mashed potatoes.
