- 1 lb ground beef
- 1 cup chopped onion
- 1 garlic clove, minced
- 2 cups hot water
- 1 (12 ounce) can tomato paste
- 1 tablespoon beef bouillon granules
- 1 1⁄2 teaspoons dried oregano
- 16 ounces cottage cheese
- 2 cups mozzarella cheese, divided
- 1⁄2 cup grated parmesan cheese
- 1 egg, beaten
- 24 jumbo shell noodles, cooked and drained
directions
- In a large skillet, cook beef, onion and garlic until meat is no longer pink; drain well. Stir in water, tomato paste, bouillon and oregano; simmer, uncovered, about 30 minutes.
- Meanwhile, in a medium bowl, combine cottage cheese, 1 cup mozzarella, Parmesan cheese and egg; mix well. Stuff shells with cheese mixture; arrange in a 13 x 9 x 2 inch baking dish. Pour meat sauce over shells.
- Cover and bake at 350 degrees for 30 minutes. Uncover, sprinkle with remaining mozzarella cheese. Bake 5 minutes longer or until the cheese is melted.

This was a great recipe. Delicious flavors. I made it the night before for our lunch the next day. It took about 45 minutes to cook plus the extra 5 for the cheese to brown a bit. The sauce had a very nice flavor. I had just added an extra clove of garlic and some salt and pepper. Will definitely be making this yummy dish again. Thanks hungrykitten.

What a wonderful recipe! I'd never made stuffed shells before, so I wanted this as a guide. I cut the recipe down to 3 servings and used a jar of spaghetti sauce instead of the water, tomato paste, bouillon, and oregano. The sauce I used was beef flavored because of the idea of beef bouillon. I also used lean ground beef. I made these around noon and put them in the fridge until 5:30, popped them in the oven and they were ready by 6:15. Delicious, relatively easy meal! Thank you! I love food! I collect cookbooks and recipes and read them the way most people read novels. I have no children but I have two cats who also love to eat. I am also a movie buff and one of my biggest pet peeves is when people talk during a movie!
