  1. Heat a cast iron skillet on medium high, add sausage in chunks and cook for 3 minutes.
  2. Add onion, garlic, jalapeño, salt and pepper. Cook for 3 minutes.
  3. Add Italian ragu pasta sauce, cook for 10 minutes and set aside.
  4. 4 Heat a non stick pan, add oil and cook for over easy egg. Add salt and pepper.
  5. Serve eggs with sausage sauce, refried beans,sprinkle feta cheese and cilantro. Warm corn tortillas and enjoy!
