Directions

  1. In a small bowl whisk egg, milk and oil. Set aside.
  2. In a large mixing bowl, mix flour, salt, baking powder, spices and Parmesan cheese.
  3. Make a well in the center and pour liquid mixture inches.
  4. Gently fold dry ingredients into wet ingredients until combined.
  5. Don't over mix.
  6. Fold in zucchini.
  7. Scoop half the batter into each greased loaf pan.
  8. Top with 1/4C of the shredded cheese and bake at 400° for approximately 20-25 minutes until golden.
  9. Remove from pans, serve warm.
  10. You can freeze wrapped loaves up to a month.
