- 2 -3 tablespoons olive oil
- 2 cups onions, chopped
- 1 green bell pepper, diced
- 2 teaspoons basil
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 1⁄2 teaspoons salt
- 1 (29 ounce) can tomatoes
- 1 (6 ounce) can tomato paste
- 1 tablespoon honey
- 1⁄2 teaspoon black pepper, to taste
- 4 -6 large garlic cloves, mince
directions
- Heat the olive oil in a kettle. Add onion, bell pepper, herbs and salt. Saute over medium heat until the onion is very soft (8 to 10 minutes).
- Add tomatoes, tomato paste, honey and black pepper. Use a spoon to break up the tomatoes into bite size pieces. Bring to a boil, then lower heat and simmer, partially covered, for 20 - 30 minutes.
- Add garlic and cook 10 minutes more.
- Serve over pasta or anywhere tomato sauce is called for.
