Italian Tortellini Soup

"I can't remember where I got this recipe but it is irresistible. My dh loves this. It is meaty and stick to your ribs delicious. Enjoy!"

  • Remove sausage casing. In dutch over brown sausage.
  • Remove sausage; reserve 1 tbsp drippings.
  • Saute onions and garlic in drippings until onions are tender.
  • Add broth and next 7 ingredients, and add sausage.
  • Bring to boil, reduce heat and simmer uncovered 30 minutes.
  • Skim fat from soup and stir in zucchini and remaining ingredients, except parmesan cheese. Simmer covered an additional 35-40 minutes until tortellini is tender.
  • Serve topped with parmesan cheese.
  • If you prefer to use fresh tortellini, simmer 20-35 minutes until tender.

  2. What a great hearty soup for fall. A hunk of crusty bread and serve the rest of the wine in the recipe for a drink or two and your all set.
     
  3. i saw this in a gooseberry patch cookbook, the only difference was using a 16 oz can of diced tomatoes instead of the 4 med tomatoes. we absolutely love this. i use the dried cheese tortelllini in the macaroni isle. i also made this with ground beef instead of the sausage, also ground chicken and also chunks of chicken breast with chicken broth. great anyway i make it!

I love trying new recipies and have a 17 year old and a husband that will try anything once. Even my Mom will try just about anything and will help cook once in a while. I usually make my mom do a marathon cookie bake during the holidays. She groans but I think she really likes it. I grew up in Florida and moved to North Carolina 14 years ago. I love the beauty of the mountains and the seasons but small town living can be both a little boring and joyous at times. The seasons let you cook different foods; stews and casseroles become popular during the cold weather months and of course lighter dishes during the summer.
