  • 1 tablespoon olive oil
  • 12 cup chopped onion
  • 8 cups chicken broth, homemade or 8 cups commercial chicken broth
  • 3 ounces thin spaghetti, broken in half
  • 34 teaspoon black pepper
  • 3 ounces precooked cocktail-sized meatballs, quartered
  • 1 12 cups Baby Spinach, leaves. shredded

Directions

  1. In a large pot, combine oil and onion. Cook over medium heat for 1 minute, or until sizzling. Add broth, pasta, and pepper. Bring to a boil. Cook, stirring, for 5 minutes.
  2. Add meatballs and spinach. Reduce heat to low. Cook for 5 minutes or until pasta is tender.
