Italian White Beans with Chicken

ingredients
- 1 tablespoon olive oil or 1 tablespoon vegetable oil
- 1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves
- 1 clove garlic, finely chopped
- 2 cups cut up cooked chicken or 2 cups cooked turkey
- 1⁄2 cup chopped drained sun-dried tomato packed in oil
- 1⁄4 cup sliced ripe olives
- 2 (15 ounce) cans great northern beans, rinsed and drained (You may substitute 2 Cups cooked pasta instead of the beans)
directions
- Heat oil in 10-inch skillet over medium heat.
- Cook basil and garlic in oil for 3 minutes, stirring frequently.
- Stir in remaining ingredients.
- Cook, stirring frequently, until hot.

I was just about to post this recipe... I am so glad you beat me to it and now I can give you the stars because this dish is so yummy! I am thinking it would be good with a can of diced tomatoes... I haven't tried it yet, but I think next time we eat this I will. It's not an overwhelming dish to eat either. It just tastes fantastic! Thanks for the staple dish in my kitchen ;)

I saw this both here and our BC cookbook. My wife made this, but we had to sub pesto for the basil. I also cooked the beans separately prior adding to the recipe. This was so good, even though I'm not a huge fan of sun-dried tomatoes. The tomatoes perfectly complemented the other ingredients. The pesto really zinged up the recipe. Now I know why it made it to the BC cookbook.
