Italian White Beans with Chicken

It is done in a flash, but with such exotic flavor, you'd think it took hours. Could easily be a vegetarian dish if you substitute mushrooms or tofu in place of the meat."

  • Heat oil in 10-inch skillet over medium heat.
  • Cook basil and garlic in oil for 3 minutes, stirring frequently.

  1. I was just about to post this recipe... I am so glad you beat me to it and now I can give you the stars because this dish is so yummy! I am thinking it would be good with a can of diced tomatoes... I haven't tried it yet, but I think next time we eat this I will. It's not an overwhelming dish to eat either. It just tastes fantastic! Thanks for the staple dish in my kitchen ;)
     
  2. I saw this both here and our BC cookbook. My wife made this, but we had to sub pesto for the basil. I also cooked the beans separately prior adding to the recipe. This was so good, even though I'm not a huge fan of sun-dried tomatoes. The tomatoes perfectly complemented the other ingredients. The pesto really zinged up the recipe. Now I know why it made it to the BC cookbook.
