  1. cut chicken into bite-size pieces.
  2. brown in oil chicken pieces.
  3. add onions, garlic and peppers until onions are translucent.
  4. add cumin, chicken soup, spinach and salt and simmer 5 minutes.
  5. add sour cream heat through.
  6. salt and pepper to taste.
  7. put ½ mixture in baking dish.
  8. smash ½ of the Frito’s and ½ of the Jack cheese in layer over chicken.
  9. make one more layer with remaining mixture.
  10. finish with more chips and cheese.
  11. sprinkle with cayenne pepper or chopped jalapenos to top.
  12. bake 50 minutes to 1 hour or until hot and bubbling.
  13. Easy basic recipe-- be careful with the spinach as a little goes a long way and too much can overpower things.
  14. Add more peppers to increase heat.
