Jalapeno Mashed Potatoes

Ingredients Nutrition

  • 2 12 lbs potatoes, peeled and diced
  • 12 cup butter, cubed
  • 12-34 cup heavy cream, warm
  • 1 jalapeno pepper, roasted, peeled, and pureed
  • salt and pepper

Directions

  1. Thoroughly wash, clean, and dice potatoes.
  2. Place them in a pot of water with a dash of salt.
  3. Bring potatoes to a boil.
  4. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12-15 minutes.
  5. Remove the pan from the heat and drain.
  6. In the same pot add the butter.
  7. Using a handheld masher, mash the butter into the potatoes.
  8. Add enough warm cream until desired smoothness is achieved.
  9. Season the potatoes with jalapeno, salt, and pepper to taste.
