Jalapeno Popper Dip

  • Preheat oven to 375.
  • Spray a 2-quart casserole pan with cooking spray.
  • Using an elecrtic mixer or food processor, combine all ingredients except 1/2 parmesan, breadcrumbs and butter. You do not need to drain either can of peppers.
  • Spread the filling into your prepared casserole dish.
  • In a bowl, combine bread crumbs, 1/2 parmesan and butter. Season with pepper to taste. Sprinkle the crumbs over the filling.
  • Bake for about 20-30 minutes until heated through and lightly golden.

  1. I couldn't find the recipe a coworker gave to me for her jalapeño popper dip. This one sounded very similar so I gave it a try. I think this one way have more mayo in it and the other didn't have butter drizzled over the topping. Not identical, but still good.
     
  2. This dip was a big hit at my Mothers Day cookout. It would have still been good without the crispy topping, but that made it extra special! This recipe is easy to make ahead of time and heat in the oven when you are ready for it.
