Jalapeno Popper Meatloaf

“This was an adaptation that I made from "Jalapeno Popper Burgers" because it looked SO good, but grilling was out of the question today. It also sounded like (and ended up being) a great alternative to traditional mexican recipes! I included the healtheir versions of most ingerdients, but of course, you can be as indulgent as you like! It may be important for you to know that the globby deleciousness of the cream cheese goes away when it's cooked, but the tasty flavor of the appetizer stays.”
