Jalapeno-Red Bean-BBQ Burgers

"Moist, delicious vegetarian alternative to boring frozen veggie burgers. These are easy to make and taste wonderful on whole-grain buns with some cheddar cheese, tomato and lettuce for crunch. Be watchful while cooking these ... the sugar content in the barbecue sauce can cause the burgers to blacken kind of quickly. Tastes great on the grill, too ... just keep an eye on them!"

  • Heat oil in nonstick skillet over medium heat.
  • Add next onion, plum tomato, jalapeno, garlic and chili powder; sauté 5 minutes.
  • Cool slightly.
  • Using fork, coarsely mash beans in bowl.
  • Combine with onion mixture, breadcrumbs, 2 tablespoons of the barbecue sauce and egg white.
  • Shape mixture into four 1/2-inch-thick patties.
  • (Can be prepared 4 hours ahead. Cover and chill.) It will look as though these little burgers will just fall apart and turn to mush, but they stay together really well once they"hit the pan"!
  • If grilling, oil the rack or spray grill rack with nonstick spray, then fire up coals to medium heat.
  • If pan-frying, heat a little olive oil over medium heat.
  • Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on buns.
  • Serve with more barbecue sauce, and cheese, tomato, lettuce, avocado, or whatever topping you like!

  1. This was yummy! I followed the directions except that I used black beans instead of kidney beans due to a personal preference and added 1 Tbs of chopped green bell pepper. I thought that these had a very good flavor and loved the addition of barbecue sauce in the recipe, you can really taste it! :D They also look very nice. I made mine thin and cooked them on a skillet 3 minutes on each side, after cooking they were just a little crumbly but nothing to worry about if you use a spatula to put them on the bun. Thanks EdsGirlAngie! Update: I have made again at least 3 times since reviewing. I like to put in a whole egg and a little bit of oatmeal and it seems to help them hold together better. Also, making them thicker helps them not to fall apart and I have had success baking these in an oven at 350^ till they looked and felt done.
     
  2. I'm a regular burger type of guy, but wanted to give this recipe a try. I normally don't like veggie burgers but man this one was AWESOME. They held together nicely and were packed with flavor!
     
  3. i'm sorry i totally disagree with the other reviews. these were complete soup until i added over a cup of breadcrumbs and they did not hold together at all before, during, or after cooking. moreover, they were very bland even though i added quite a lot more chili and jalapeño then called for. i might use kidney beans as a base for burgers again but not without a lot more binding agents and a heck of a lot more flavor. these were time consuming, annoying, and totally tasteless. will not make again.
     
  4. Not bad. I added cayenne and cajun spices to give it more of kick. Much cheaper than buying frozen vegetarian patties at a grocery store.
     
  5. Very nice and easy. I used 4 jalapenos & still didn't find them spicy, I will try more next time. Topped with munster cheese & carmelized onions. Delish

  1. I left out the jalapeno and the egg, and used 3/4 cup oatmeal instead of breadcrumbs, served with avocado, lettuce, tomato, cheese and barbecue sauce. These went over alright - they didn't have much flavor or substance themselves so we wound up smothering ours in barbecue sauce, even with all the other toppings. I recommend throwing some kind of Cajun spice mixture into them.

  3. I'm giving this recipe a five star rating for flavor. I made my patties a bit more thin than the photo indicates. I used a whole egg, 1/2 cup fine bread crumbs and a can of Goya pink beans instead of kidney beans. I substituted canned, diced tomatoes (lightly patted dry with a paper towel) for fresh. I also froze the patties on greased plastic wrap prior to cooking. They held together fairly well. I will definitely make these again soon. Thank you for this recipe!
     
  4. These are yummy. I used 1 whole egg and 1/2 cup bread crumbs and 1 tbls of Heinz chili sauce instead of the jalepeno and chili powder.This gives it a mild to medium hotness as i don't like thigs too hot. Nor doe's my daughter.For those that don't think that this is spicy enough just add more chili sauce or powder or chilies.Also if you cool off the mixture in the fridge for at least 1/2 hour it will hold together better and not be mushy when cooked.
     
  5. This burger had fantastic taste! I added 1/4 cup wheat germ because of other reviews saying they needed more bread crumbs and the wheat germ is healthier. I used cooked pinto beans in place of kidney beans because that's what I had. Also, about 2 Tbs of chopped bell peper as I wanted more peppers or chilies without the flavor being too strong for my kids. I know we will be making this again and I'm sure it will taste just as great with the kidney beans. Thanks!
