- Cream butter and sugar til fluffy (if you have a strong mixer you may start with softened butter).
- Add egg yolks, vanilla and salt and beat well.
- Gradually add flour and mix thoroughly.
- Lightly beat egg whites in a separate bowl (Do not add in).
- Roll your dough into 3/4 inch balls and dip in egg whites and roll in your pecans.
- Place 1" apart on greased cookie sheet and mash down the centers with your thumbs.
- Bake at 350 degrees for 15 minutes (my oven it's just a little more).
- Cool slightly and just before serving fill centers with preserves.
