Directions

  1. Cream butter and sugar til fluffy (if you have a strong mixer you may start with softened butter).
  2. Add egg yolks, vanilla and salt and beat well.
  3. Gradually add flour and mix thoroughly.
  4. Lightly beat egg whites in a separate bowl (Do not add in).
  5. Roll your dough into 3/4 inch balls and dip in egg whites and roll in your pecans.
  6. Place 1" apart on greased cookie sheet and mash down the centers with your thumbs.
  7. Bake at 350 degrees for 15 minutes (my oven it's just a little more).
  8. Cool slightly and just before serving fill centers with preserves.
