ingredients
- 2 lbs smoked sausage, cut into 1/4 inch pieces
- 2 -3 green peppers, chopped
- 1 red pepper, chopped
- 2 onions, chopped
- 4 stalks celery, diced
- 2 (14 1/2 ounce) cans tomatoes seasoned with basil garlic & oregano
- 10 ounces tomato paste
- 2 (14 ounce) cans beef broth
- 2 tablespoons dried parsley
- 1 tablespoon dried basil leaves
- 1 teaspoon dried oregano leaves
- 1 teaspoon cayenne pepper
- 2 teaspoons Tabasco sauce (optional)
- 2 lbs cooked shrimp, shelled
- 6 cups brown rice, cooked regular
directions
- Add all ingredients except shrimp and rice in 6 or 7 quart slow cooker.
- Cover and cook on low for 8-10 hours, or on high for 3-4 hours.
- Add shrimp and rice the last 30 minutes of cooking.

I am a big fan of Jambalaya and I love this b/c I can pretty much dump and go (reserving shrimp and rice for later) I scaled this way back (for two) and threw it in the crock pot on high while I went to the gym! Add shrimp and rice and let cook while I showered and voila -- yummy dinner! I may consider making the enitre recipe and then divide into smaller portions and freezing and dumping before work! Thanks for posting! Made for Everyday is a Holiday October 2009!

My first attempt at making jambalaya/first taste of it. It was great! I started late in the day, however, so we cooked in a pot for a few minutes and THEN used the crockpot, trying to speed up the process. I also used a bit less than two lbs of sausage, because we didn't have that much in the house. Thanks WiGal! We enjoyed this recipe immensely, and my family rated it in beteen four stars and four point five. Made on behalf of the Genies for ZWT5.
