Japanese Curry Rice

"This is an attempt to copy the rice curry I get in my favourite Japanese restaurant. I've adapted variations of recipes found on the internet and this is my best effort. It has a very vibrant flavour."

  • Caramelise onions for 15 minutes.
  • Add cumin, turmeric and chilli and fry for 1 minute.
  • Add peppers and any other vegetables.
  • Add all sauces.
  • Add rice and coat grains with the sauce.
  • Add 1 cup of water.
  • Grate apples into the rice.
  • Add peas.
  • Taste and season if needed.
  • Cook rice until liquid is absorbed and rice is cooked.
