"This recipe was born during a late night munch fest. I wanted tater tots and he wanted nachos. We both wanted something hot, salty and cheesy. This was his favorite and he even asks for it for dinner."

  • 12 lb ground beef
  • 14 cup onion, diced
  • 14 cup olive, diced
  • 12 teaspoon garlic salt
  • 12 teaspoon emeril's southwest seasoning
  • 12 teaspoon french fry seasoning
  • 1 slice American cheese
  • 12 cup shredded pizza cheese
  • 12 cup shredded jalapeno cheddar cheese
  • 20 tortilla chips

directions

  • Brown ground beef.
  • Add onions and olives, cook until onions are soft.
  • Add seasonings to beef mixture.
  • Spread tortilla chips on plate.
  • Top with half of the shredded cheese.
  • Top with ground beef mixture.
  • Top with American cheese bits.
  • Top with remaining shredded cheese.
  • Heat for 30 seconds in the microwave until all cheese is melted throughout.
  • Serve.

I'm a network administrator and also teach step aerobics. My hobby during warmer weather is my vegetable garden. I love to cook and make up interesting recipes. I've recently been put on a restricted diet. No dairy, gluten, wheat, oats, sugar. So, I'm looking for ways to spice up my meals. I cook non-restricted meals often as my husband can eat whatever he wants and I love to cook for him. But, once a week, I make him something "interesting" and healthy and he has to at least try it. So far, it's been a big hit.
