  • Preheat oven to 325 degrease.
  • Grease 2 nine inch pans or a 9X13 pan.
  • With a mixer, blend the cake mix, eggs, oil and mandarin oranges together.
  • Bake for 25 to 30 minutes.
  • After cake has cooled,.
  • With a mixer, mix together the pudding mix, cool whip and drained pineapple until well blended.
  • Spread mixture on top and sides of cake.
  • Keep refrigerated until ready to serve.

  1. I am not a fan of Cool Whip. I think I will substitute whipped cream. Any thoughts?

  1. My husband's family calls it Pea Pickin' Cake and it's been his birthday favorite since he was a kid. They reserve the mandarin juice, poke holes into the cooled cake and pour it over.
     
  2. I'd never heard of this type of cake before, but it looked easy to make and served plenty, so I went for it. Well, it didn't last long here, delicious!! So easy and love the marriage of mandarins and pineapple together with the cake and frosting - yum!
