- 4 garlic cloves, minced
- 1 scotch bonnet peppers or 1 habanero pepper, stemmed, seeded, and finely chopped
- 1 teaspoon dried thyme
- 2 teaspoons ground allspice
- 3 tablespoons dark brown sugar
- 2 tablespoons dark rum
- 2 tablespoons vegetable oil
- 2 teaspoons kosher salt
- 1⁄2 teaspoon black pepper, divided
- 3 lbs country-style pork ribs
- 2 tablespoons butter
- 2 lbs sweet potatoes, peeled and cut in 1/2 inch thick slices
- 6 scallions, roots trimmed, sliced thin
- 1 large tomatoes, finely chopped

- Preheat a broiler on high. Mix together the garlic, hot pepper, thyme, allspice, brown sugar, rum, oil, and half of the dalt and pepper. Rub over the ribs. Place ribs on broiler tray and broil 5 minutes per side.
- Dot the bottom of the slow cooker with butter. Layer the sweet potatoes evenly and season with the remaining salt and pepper. Arrange ribs on top and cover and cook until ribs and potatoes are fork tender, about 3 to 4 hours on high, or 6 to 8 hours on low.
- Lift the potatoes and ribs from the slow cooker with a slotted spoon and arrange on a platter. Skim fat from juices and stir in scallions and tomatoes. Spoon juices over ribs and serve.
