Jicama-Orange Salad

ingredients
- 2 cups julienne-sliced jicama
- 5 oranges, peeled and sectioned
- 1⁄4 cup sliced green onion
- 1⁄4 cup chopped fresh cilantro
- 3 tablespoons nonfat sour cream
- 1 1⁄2 tablespoons fresh lime juice
- 1 1⁄2 teaspoons vegetable oil
- 1⁄8 teaspoon salt
directions
- Combine first 4 ingredients in a medium bowl; toss well.
- Cover and chill.
- Combine sour cream, lime juice, oil and salt in a small bowl; stir with a wire whisk.
- Just before serving, drain jicama mixture.
- Pour dressing over jicama mixture; toss gently.
