Jicama Peanut Salad

"I created this recipe to try and duplicate a salad I had at Dayton's River Room over 15 years ago. It has changed a bit over the years but is always a hit at my house."

  • Peel and julienne the jicama (don't grate it or it will be a soggy mess).
  • Put the peanuts in a zip bag and smash them with a can or mallet a couple of times.
  • Boil sugar and vinegar until sugar dissolves and let cool a bit and add crushed red pepper flakes.
  • Chop cilantro.
  • Mix jicama, 1 - 1 1/2 bunch cilantro and red peppers and toss with sugar/vinegar mixture.
  • Take remaining cilantro and sprinkle over salad, top with peanuts.

  2. This was a very refreshing salad; quick and easy to put together. I did substitute Splenda for the sugar and the taste was great. I will certainly make this again. My husband and I ate at Dayton's River Room many times, but I don't remember this salad. Thank you for posting it Lais.

If I had it to do over again, I would have stayed with catering and restaurants. Who knew food would get so big? But instead I went into building email and cyber-security systems...and believe me, there are very few middle aged Jewish women in my field. I find the food has eased many an anxious young man fearful that my presence in a data center would cause a power outage. I am married to a retired kindergarden teacher and have two grown children. I love to get a new, challenging cookbook and cook my way through to the end. I save my favorite recipes in a notebook. I like an "audience" for my cooking and so I love to give parties and I contribute meals to our temple's Caring Hands organization.
