" Joe's" Peppermint Cookies N Cream Brownies

"Tired of eating Candy-Cane Joe-Joe cookies straight out of the box? Try them in this recipe! (note: this year I've also seen peppermint Oreos, so you could use those if you don't have a Trader Joes near you). These delicious, fudge-y brownies are made with the popular candy-cane chocolate wafer cookie available at Trader Joe's during the holidays. Make these early in the day as they slice best when cooled completely."

  • 1 cup butter
  • 6 ounces unsweetened chocolate, chopped
  • 3 cups sugar
  • 12 teaspoon salt
  • 2 teaspoons vanilla extract
  • 18 - 14 teaspoon peppermint extract
  • 4 large eggs, room temperature
  • 1 23 cups all-purpose flour
  • 13 cup unsweetened cocoa powder
  • 3 cups roughly chopped peppermint oreos (approx 18)
  • 1 candy cane (optional)

  • Preheat oven to 350°F.
  • Line a 9×13-inch baking pan with aluminum foil, and grease lightly.
  • In a medium-large saucepan over low heat, melt together butter and chocolate, stirring occasionally.
  • Stir in sugar, salt and vanilla & peppermint extracts; remove from heat.
  • Whisk in eggs one at a time, waiting until each is fully incorporated before adding the next.
  • Stir in flour and cocoa powder until mixture is uniform. Stir in crushed cookies.
  • Spread batter into prepared pan.
  • If desired, crush 3-4 additional cookies finely and scatter on top of batter. You can also crush 1 candy-cane and sprinkle it on top; it will melt slightly but still be pretty and festive.
  • Bake for about 35 minutes, until a toothpick inserted into the center comes out with moist crumbs, but not coated with batter.
  • Cool brownies in pan on wire rack for 20 minutes, then lift brownies in the foil out of the pan and place on a wire rack to cool completely (at least one more hour) before slicing.

  1. I was so excited to try this recipe! I used a boxed Betty Crocker brownie mix because easy and they always come out perfect! I was sad Trader Joe's was out of peppermint Joe Joe's, we bought a box a couple weeks ago and loved them but they said sell out fast. I used mint Oreo's which has a light green filling. I sprinkled crushed candy cane on top, how ever you couldn't see much of it at the end. It was there when I checked the brownies but after I reset the timer for 5 more min they all sank into the brownie- I was bummed so not many pretty red pieces on mine. However now that I see a few of the candy cane pieces it looks a little funny melted so I might like better not adding? Maybe I should sprinkle very crushed pieces on top after cooked? The Oreos crushed on top didn't look pretty and were soft Not a crunchy topping so I think next time I wont crush them for the top so it looks prettier, but maybe I didn't like the look of mine because mine were light green filling. Anyway they taste wonderful and that's what counts. I really enjoyed them cold out of the fridge more then served at room temp. Thanks for the fun idea I will make again next Christmas!
     
  2. I am going to wait until I make this again to add my stars. I had bought my mint cookies after the hoidays when they were on sale. I had started to make these browinie and set my "helper" DD on the task of breaking up the cookies while I was making the batter. She used the regular oreos by mistake so I upped the mint extract to 1/2 teaspoon. I though they were ok this way, but not as minty as I would have liked. The kids loved them and DH gave them 4 out of 5. I guess I will have to wait until holiday time to try to make these again, as no one has these cookies anymore. But I am looking forward to it and I will add our star rating to the review at that time.
     
  3. I cheated and used the boxed mix version of these brownies, but they turned out fabulously! I made them to send to school for my daughter's teachers. I loved how they looked so pretty and festive. I baked the brownies according to the directions on the box. Had to bake a few minutes longer, but otherwise didn't make any changes. Used chopped up mint oreos and crushed candy cane. YUM!
     
  4. These were so nice and chewy and the peppermint flavor took it over the top! I followed Nora's suggestion and used a brownie mix and it still came out great. I wish I could give these more stars. Thanks, Donna
     
  5. Well, the peppermint cookies were an adventure to find, seeing the time of the season. Luckily I knew a vendor, that works at the Jewel warehouse 20 minutes from here and he got me a package. Now as for the recipe, I excluded the candy cane, and the salt. They were fantastic cookies that will be made again.. near Christmas time here. Made for 1-2-3 hit wonders.
