“My own family style pasta sauce. I use San Marzano tomatoes, fresh basil, oregano, and thyme but you will need to double the herbs amount. It stays well and can be used in many different pasta dishes. You may also substitute one can of diced tomatoes for a can of pure tomato sauce. Please feel free to share how you use it and what changes you made.”

Directions

  1. In a medium sized pot add diced tomatoes, tomato paste, and beef marrow bones and heat on medium heat.
  2. Add basil, oregano, thyme, salt, pepper, sugar, dried red pepper, olive oil, garlic, onions, and parsley and stir to incorporate.
  3. Once the sauce starts to bubble add wine and lower heat to a low simmer and cover.
  4. Stir every 15 minutes until the marrow bones have no marrow in them. Aprox. 2 hours.
  5. Remove from heat and let stand and stir uncovered to reduce the sauce. Add chicken stock if you would like it less thick.
