Judy's Mushroom Rice

"I remember my Mom making this when I was a kid, and I always loved it. Since she has recently passed on, I wanted to "record" it somewhere so that I don't have to worry about forgetting it. Try it, very very good!! --PS--I'm not sure of the oz size of the soup, but just a regular size can of soup and your choice on the size can of mushrooms..mini or regular"

  • 1 12 cups uncooked rice
  • 1 (8 ounce) can French onion soup
  • 1 (8 ounce) can mushrooms
  • 14 cup butter

directions

  • Melt the half stick of butter in a glass baking dish, in a 350 oven. When butter is melted, add rice, soup & mushrooms. Bake at 350 for about 25-30 minutes, whenever rice is puffed up/done.

  1. The rice did not cook fully and was crunchy. Didn't have enough taste/seasoning.
     
  2. This was good and easy to make. I cut back on the butter but followed the rest of the recipe. This made for some good tasting rice. Made for Fall PAC 2009.
