Juli Neni's Chicken Soup

"When I was younger I lived in Hungary for a couple of years. And I had a boyfriend, who taught I'll better move in with him when I had give back my apartment. Well, what you don't know is that he was still living with his parents. If you thought it was scary,think of the the poor people,his parents,who had no idea of his plans. We moved my stuff late at night and they woke up to a lovely surprise:ME! The first couple of weeks were kind of weird,but once they got to know my lovely character and even my greater modesty we got along just fine. His mom was the best,we keep in touch even now,and she taught me how to cook. She used to be a chef in a hotel, so I had a lot to learn from her. Even though she used to be a chef, I was the one who taught her how to turn the crepes! I think we became friends in the kitchen. Of course, in the beginning she was watching me so suspicious but when we parted she told me if I was to marry her son (didn't happen) she would always be on my side in a quarrel. This is her soup and even though I don't know the quantities I'll try to reproduce it. She was using organic chickens or hens and her soup had a beautiful yellow color. What's different about it ,it's not the soup but mostly the way it's served.Times and serving are approximate. It takes longer to boil a hen. It's mostly a Sunday or holiday soup,when the family gets together. Finally, I got my first recipe with a story behind. More to come,stay tuned!"

  • Boil the chicken on low, together with the veggies.
  • When chicken is soft, strain the soup.
  • Separately, boil the noodles.
  • Strain the soup and season with salt.
  • Serving: you need three bowls: one for chicken and veggies,one for the soup and one for the noodles.
  • Everyone puts in their plates whatever they desire: a piece of chicken, a carrot,noodles,etc.
  • Sprinkle with parsley and black pepper.

  1. What a wonderful story! I made half the recipe and since I was the only one eating (and washing the dishes) I put it all in one bowl. I love kohlrabi and parsnip and never thought to add them to chicken soup. I made as posted and added a little dill. Wonderful marvelous fantastic recipe! Thanks for posting little. Next time I will make the full recipe without mixing the pasta in so I can store some in the freezer. Made for Everyday Is A Holiday.
     
  2. Littlemafia, I was cracking up with your story. It is so funny lol. Think about having your boyfriend's mother to be your mother inlaw..it was a dream come true for every girl out there. Well, silly me I'm suppose to give you comment about your recipe but I don't. I was taken by your story..I can't help smiling right now. I know this chicken soup taste good. Chickens that are raised in the farm taste way much better than store bought. I know coz we raised chickens back home. Thanks for the story and the recipe which I will soon to try. This is an update: Sooo goood! I went to the store and buy the organic chicken to make this woderful soup. The ingredient is so simple and yet it is full of flavor. Very tasty soup. We loved it. I added thyme and bay leaves to the soup. Fantastic!
     
  3. Used this wonderful recipe for soup & serving it for our *Saturday Lunch at the Farm* crowd who embraced the whole idea with excitement and gusto. I followed this exactly, making and preparing everything (but keeping it separate) the evening prior, all I needed to do was reheat the ingredients. I had enough soup bowls and other bowls to include all ingredients; even adding, sliced green onion, potato cubed (in place of parsnip) fluffy large egg noodles, and carrots and celery in another bowl. They came by added some clear broth to their bowls, got some cut chicken strips, added whatever else they wanted. This was a fun event, and nothing was left but one piece of parsley and 10 bowls. :( (Oh and guess who got to clean up -----> ha! ) Anyway, great idea, and was delightful! I come from the land of Dracula and I have two little daughters; they're three years apart.I travelled a lot and I lived in Hungary,Croatia,Canada,Thailand,Japan and Iran(DH is from here). I've seen a lot of wonderful places, the travel bug is still in me but waiting for DDs to grow a little so we can go together. Lots of wonderful memories and hoping to add some more,but my travelling style has to be adjusted now.No more backpacking! I feel old,suddenly. My girls are everything for me and I'm lucky that I'm able to be at home with them.My life really changed since having them. I like eating healthy,DH works out a lot and taught me about the right foods.Right now I'm trying to lose a few kg,but I'm happy if I lose one kg/month. Never needed a drastic diet,I drink a lot of water and luckylly there's no McDonalds here(yet) to eat junk food. I prefer homemade cooking to restaurants, these days we can make a better tasting meal at home. I like knowing what goes in my food and what hands are cooking it. I always look at a chef's hands and believe me I've seen dirty fingers too! I came to the Zaar to look for a pancake recipe and now my refrigerator is full with jars of homemade stuff. I made a lot of friends and I enjoy playing in the tag games since receiving a premium membership gift from Sydney Mike. Thank you, Syd. I want to thank everyone who makes my recipes and takes the time to take photos. Sometimes I loose track and I can't get back to thank each person making a recipe. I don't mind if someone doesn't stick to the recipe,everyone's taste and needs are different,sometimes ingredients are hard to find and I know this better than most.
