Julia Child's Risotto Al La Piémontaise

- 2 tablespoons butter
- 1 1⁄4 cups unwashed raw rice
- 1⁄4 cup dry vermouth
- 2 1⁄2 cups chicken stock or 2 1/2 cups chicken bouillon

- 1⁄2 cup pine nuts toasted in butter
directions
- Melt the butter over moderate heat. Add the rice and stir slowly with a wooden fork until the grains turn translucent, then gradually milky white. about 2 minutes. Add the vermouth and let absorb, then stir in 1/3 of the chicken stock or boullion. Lower the heat and cook at the barest simmer for 3 to 4 minutes stirring occasionally. When the liquid is absorbed, stir in half the remaining stock and continue cooking slowly, stirring occasionally with a wooden fork, and when the liquid is again absorbed add the last of the stock. When this if finally absorbed taste the rice. If not as tender as you wish, add a bit more stock or water and cover the pan for a few minutes. Rice should take 15 to 28 minutees total cooking time. Season to taste with salt and pepper and if you wish toss with the optional toasted pine nuts.

Why would anyone use substitutions for a Julia Child recipe? It's just wrong in my opinion. Chicken stock gives a completely different flavor than chicken broth. I love that Julia used vermouth as I always have it on hand even if I don't have a white wine that has not gone bad because of neglect. Vermouth is a whole different ball game. Thank you for posting this recipe. : )

Paired perfectly with crispy garlic chicken I made. I substituted the vermouth for white wine and chicken stock for chicken broth. I sautéed 3 tbsp of onion in the butter prior to adding in the rice, which I think boosted the flavor greatly. Still creamy with the substituions, will be making again since it's so easy!

Simple but excellent! I did a store demo using this recipe to showcase chicken boullion cubes. People kept loving this recipe so much I ended up having to write it on napkins and passing it out... like 20 times! People raved about the recipe, and no wonder, Julia Child was the best! The only thing that we have added was about 2-3 tablespoons of minced onion.

I'm finally posting recipes after years of using this site. I want to be able to access treasured recipes without lugging a ton of books south with me when I move to Lake Chapala in Mexico.
Recently retired after 35 years teaching Algebra to 8th graders. I learned to cook at my mother's knee (and Julia Child expanded my vision). She was a 1st generation Swedish-American. Christmas was when we immersed outselves in the Swedish culture and food. Many of the recipes I have recently posted are from her hand-written notes and recipes. My one real regret is that she would never write down the "juice" she used to make pickled herring.
Favorite cookbook? I have over 100 or so. I love reading recipes.
